Food Services - Through the operations of
a school site restaurant or direct worksite based community
classroom placement, students will be exposed to all phases
of food preparations and service skills. Students will rotate
through the back of the house operation of food preparation,
pastry, grill, fry cook and cleanup. Front of the house rotational
instruction in host/hosting, waiter/waitressing, bus person
and cashiering will be covered. Throughout the class the issues
of sanitation and safety, quality food preparation, and cost
control will be emphasized.
